The New Yellow Gold; Chorizo Gravy

You may remember from one of my previous posts a discussion of gold in reference to food. The sous chef Dave G at the restaurant that employs me [to charm guests while delivering their orders to the kitchen] calls white cheddar fonduta yellow gold (how can white cheddar be yellow? Eggs, darling, egg yolks more specifically). For family meal the other day the kitchen made biscuits and gravy. (I already swoon for this dish, so simple so tasty. Perhaps, I’m predisposed to love it because of where my ancestors came from. Anyway…) At first I thought the kitchen was serving cheese fonduta with the biscuits (which I’m all for, like a Welsh Rarebit on biscuits instead of toasties), but no, it was better;the most amazingly delicious chorizo gravy! They already make their chorizo in house, which is delicious on it’s on. I have been having dreams about it!

Sorry to disappoint you with no included recipe, but I encourage you to make your own chorizo (swoon) and then your own chorizo gravy (SWOOOONNN). It’s definitely a project I will add to my list. And here’s a picture from our trip to make up for it.
